Produced from several parcels scattered about Arbin. The grapes, harvested manually, are destemmed before crushing. This period of maceration can last for as long as 12 days, with daily pigeage in the first days. The elevage is principally in stainless steel, but a small percentage is left to age in older barrels. Magnin Mondeuse "Classique" Arbin is the best quantity example of this grape (Mondeuse) in Savoie.
Wine Profile: Aromas are kin to a Gevrey Chambertin and Northern Rhone mixed together on the nose. On the palette, you are treated by an ethereal lifted texture with a mix of pure red bramble fruit, earthiness in the way of sweet tobacco and dried alpine herbs, and a subtle kick of white pepper, baker chocolate, and darker fruits of plum, blackberry, and black raspberry reminiscent of notes you get in a Northern Rhone Syrah.
Food Pairings: Mondeuse wines' robust structure and acidity make them a good match for red meats, game, stews, cheese and charcuterie.
